Rich & I have been married 29 years today. Do you want to know our secret? Here it is: don’t get divorced. No, really. No matter how badly you may want to sometimes (I’m only speaking for myself, but I’d be willing to bet he’s felt the same). Divorce is simply not on\u00a0the table, which means you either have to find a way to work through it or let it go. Either way seems to work.<\/p>\n

Anyway, anniversary. Our favorite special occasion place is Classic Cafe<\/a> in Roanoke, but they’re closed on Sundays. We would have gone out last night (Saturday), but we had free tickets to the Firestone 600<\/a> Indy car race at Texas Motor Speedway<\/a>. We’ve been to a couple of races and it’s always fun, but getting back to the car last night was genuinely horrible, thanks to Rich’s injured Achilles tendon and the fact that we believed what TMS said about their tram. (FYI, there are no trams post-race, no matter what they tell you. Plan accordingly.)<\/p>\n

So I’m cooking. Steaks (on sale at Kroger<\/a>), saut\u00e9ed mushrooms, and\u2026something. Maybe broccoli, maybe Brussels sprouts, maybe green beans. Then fresh blueberry cobbler.<\/p>\n

I’ve discovered recently how brilliantly the classic “No Stir Cobbler” recipe works with fresh blueberries, whole white wheat flour, and minimal sugar. It’s delicious, it’s within acceptable parameters for a low carb diet, and it’s freakin’ easy (though not as easy as Custard Pie, which I’ll talk about some other time).<\/p>\n

Here’s the recipe. I’ll try to remember to take photos as I’m making it tonight:<\/p>\n

No Stir Cobbler<\/strong><\/p>\n

1\/2 cup (1 stick) butter or margarine<\/p>\n

1 cup sugar
\n1 cup white whole wheat flour
\n2 tsp baking powder
\nPinch of salt<\/p>\n

2\/3 cup milk
\n1 pint (or 1-1\/2 pints, if you can) fresh blueberries, rinsed & stems removed<\/p>\n

Preheat oven to 350\u00b0. Melt butter in a 2-quart (about 9″ square) baking dish. Combine sugar, flour, baking powder and salt. Mix in milk.<\/p>\n

When butter is melted, pour batter into pan \u2014 do not stir. Pour fruit onto batter \u2014 do not stir.<\/p>\n

Bake for 45 minutes, or until brown.<\/p>\n

Other than that, I really haven’t gotten enough done today. I had four things on my To Do list today:<\/p>\n

  1. Clean off my desk<\/li>\n
  2. Steaks<\/li>\n
  3. Change the sheets<\/li>\n
  4. Put the treadmills by the street (Freecycled treadmills that turned out not to work very well)<\/li>\n<\/ol>\n

    I’ve\u2026well, I bought the steaks. That’s good, right? Right?!? Rich is taking a nap on the sheets, so that’s one’s postponed. I’ve done a few other things, and gotten some laundry done\u2026meh. I’ll get to the other stuff.<\/p>\n
